Since my appointment as Executive Chef in 2006, I have endeavored to craft a menu that captures the rich, classic Irish Pub flavor without losing sight of our Minnesota surroundings. When I need inspiration, I visit the local Farmer’s Market for fresh ingredients, volunteer at one of my favorite non-profits or spend time with my wife and sons. While I am driven towards excellence, I never want to lose sight of the amazing people that make our restaurant possible, the incredible staff and wonderful guests that make my work worthwhile.

As a veteran of the Twin Cities restaurant scene, I know a good downtown vibe when I feel it. I’ve devoted my career to the success of independent restaurants and a culture of great customer service. That’s why I love my job as on-site manager of Cork’s Irish Pub. I believe that a great restaurant experience grows from the trinity of ambiance, expertise and caring. Cork’s Irish Pub is distinguished by our caring staff. A person can buy a refreshing pint of Guinness all over town, but people return to Cork’s again and again to enjoy a perfect pint with the Cork’s staff.
